Sweet Banana Biscuits




These sweet banana biscuits are perfect for breakfast or to serve with tea. This recipe makes about 2 1/2 dozen biscuits. They can frozen and reheated in your microwave.

Sweet Banana Biscuits
4 bananas, peeled and mashed
1 cup milk
2 Tbs. oil
3 tbs. Sugar
1 tsp. vanilla
4 1/4 cups all purpose flour
1 Tbs. baking powder

Preheat oven to 425. Mix the mashed bananas, milk, sugar, vanilla and oil together in a large bowl. Add the flour and baking powder and stir well. Place dough on a floured surface and knead for 3 minutes.With a rolling pin or glass jar, roll dough until it is 1/2-inch thick. Cut into 2-inch- circles with a cookie cutter or lid. Place biscuits on a lightly greased cookie sheet. Bake for 20 minutes or until they are a light golden brown.

Mimi, this sounds yummy! Do you think you could sub whole wheat flour for the all purpose?

Hi Marva, I do think that whole wheat flour would work just fine in this recipe. It would be a lot healthier, too!
