Hawaiian Chicken Recipe
1 green bell pepper
1 red bell pepper
4 chicken breasts cooked, deboned, & cubed
*OR 8 thighs
1 16 oz.can pineapple chunks
2 cans cream of chicken soup
2 tsp. garlic
2 tbsp. vegetable oil
1 tbsp. soy sauce
1/2 cup almond slivers
This is great with steamed rice, so have your rice cooked and ready.
Cut the green and red bell peppers into strips and set aside. Drain the pineapple, and save the juice in a cup. In a large skillet, heat the vegetable oil and with the garlic until blended. Stir in the canned soup and 1/2 cup of pineapple juice. Add the chicken, pineapple, and soy sauce. Cook and stir until all items are hot. Add the bell peppers and cook about 1 minute,until they are just slightly softened, but still firm. Add the almond slivers and stir. Serve over steamed rice.
