
This salsa is made using fresh, uncooked corn. It's wonderful served with tortilla chips, beans and rice, or as a side to a salad.
Fresh Corn Salsa
2 ears of fresh, uncooked white or yellow corn
1/2 bunch cilantro, finely chopped
3 green onions, chopped
2 small tomatoes, diced
( or 1 can drained diced tomatoes)
1/4 cup of lemon juice
1/4 teaspoon salt
1/4 teaspoon ground cumin
1/8 teaspoon chili powder
Dash of tabasco if you like
Cut the kernels off the cobs and put them in a bowl. Add the remaining ingredients, stir and serve. May be made ahead and chilled overnight.

Yummy! This sounds sooo good. I miss making homemade salsa!!
I might have to try that. I like salsa recipes w/out chili peppers and I love cilantro and green onion!
